NOTRE CUISINE ACADIENNE...

TITLE TAFFY, OLD FASHION MOLASSES
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Cyr Family Reunion recipe which comes from Aurore P. Michaud.
INGREDIENTS
  • 1-1/4 cup molasses
  • 1 tablespoon vinegar
  • 1/8 teaspoon soda
  • 3/4 cup white sugar
  • 1 tablespoon butter
  • pinch of salt
PREPARATION Combine molasses, sugar and vinegar and cook to 270 degrees, stirring occasionally to prevent scorching. Remove from heat and add butter, soda and salt and stir just enough to blend well. Pour into a buttered pan. When cool enough, gather and form into balls. With unbuttered fingers, pull and stretch until light colored long strands of taffy. Cut into pieces and wrap in wax paper and cool. Serve when hardened. If desired, a few drops of peppermint extract may be added for variety.  We made this when our parents went out and left us to baby-sit.
