is another great recipe from Denise Philippe. In her note which accompanied
this recipe, Denise says:
"This (recipe) is a bit more sophisticated and so, takes longer to prepare because of all the varieties of meats that it requires. /(Cette récette) étant un peu plus sophistiquée et par conséquent plus coûteuse à réaliser à cause des viandes qu'elle contient. Several different names have been given to this dish-- for example cipâte, cipaille, six-pâte. In my family, we call it 'cipâte'. / On a donné diverses orthographes au nom de ce plat-- par exemple cipâte, cipaille, six-pâte. Dans ma famille nous l'écrivons cipâte." |

PREPARATION | Mix
the meats, onions and seasonings. Add the wine and let marinate (in a pyrex
platter) at least 12 hours in a refrigerator. / Mélanger les viandes,
les oignons et les assaisonnements. Verser le vin rouge, remuer et laisser
mariner ( dans un plat en inox. ou en pyrex) au moins 12 heures au refrigérateur.
Render the salt pork in the vegetable oil in a large cast iron pot. Add the potatoes, the meats and the pastry in layers, ending with the pastry layer. Make a hole in the center of each of the pastry layers to allow the bouillion to flow through and pour the bouillon until the last layer of meat is covered--do not cover the top pastry with the bouillon. Place the final layer of pastry on top and put cover on the iron pot. Cook at 350 degrees F for 30 minutes then lower the temperature to 250 degrees F and cook for six hours. Periodically check the level of the bouillon and add if necessary. Remove the cover for the last hour to brown the top crust. (About 20 servings) / Faire revenir le lard salé dans l'huile, dans un grand chaudron en fer. Sur le lard, mettre les pommes de terre, les viandes et la pâte en couches superposées--terminer avec la pâte. Percer un trou au centre de la pâte et verser le bouillon jusqu'à ce qu'il atteigne le dernier rang de viande--ne pas couvrir la pâte avec le bouillon. Mettre le couvercle (graissé). Cuire au four à 350°F 30 minutes. Abaisser la température à 250°F et cuire 6 heures. Vérifier l'évaporation du bouillon et en rajouter lorsque nécessaire. Enlever le couvercle 1 heure avant la fin de la cuisson afin de dorer la pâte( environ 20 portions). * If the cipâte does not include wild meats, you may add young twigs of pine or spruce branches to the bouillon for a wild flavoring. / Si le cipâte est composé essentiellemnet de viande de boucherie ( veau, boeuf, poulet, porc et lapin) vous pouvez ajouter de jeunes branches de sapin ou d'épinette au bouillon, pour la saveur sauvage. |
