TITLE PAIN SUCRÉ / Gingerbread
(pronounced: pehn soo-cray, the 'n' in 'pehn' is almost silent.)
HISTORY This recipe is one from the Madawaska Historial Society's REUNION FAMILIES' FAVORITE RECIPES. Copies of the cookbook may be ordered directly from the Historical Society, Madawaska, Maine 04756. This recipe is a Hebert Family Reunion recipe which comes from Therese Dufour. 
INGREDIENTS
  • 1/2 cup shortening
  • 2 eggs
  • 1-1/2 teaspoon baking soda
  • 1 teaspoon ginger
  • 1/2 teaspoon salt
  • 1 cup boiling water or coffee
  • 1/2 cup white sugar
  • 2-1/2 cups flour
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1 cup molasses
PREPARATION Cream shortening; add sugar and mix well. Add eggs and beat until fluffy. Sift dry ingredients together in another bowl. Combine liquids. Add dry ingredients alternately with liquids, ending with boiling water or coffee. Pour into a greased and floured square pan, 8x8x2-inches. Bake at 350 degrees F. for about 45 minutes or until cake separates from the sides of the pan. Serve hot with whipped cream or plain.
