mère appris à cuisiné avec son arrière grand-mère,
Claire Thériot-Châtagnier. Elle adorait le poisson et
les huîtres. Elle allait dans le bois chercher des champignons
qu'elle utilisait dans sa cuisine. Puis elle faisait des "pàtés"
à la viande dans lesquels elle utilisait du thym comme herbe.
Je joins sa photo avec son mari. Je joins aussi une recette pour le poisson
qui est celle de Claire Thériot-Châtagnier.
Tout
comme le gombo sans roux étonne beaucoup de Louisianais, la sauce
de poisson, dit court-bouillon, de notre région répugne même
beaucoup de gens d’autres régions louisianaises. Le court-bouillon
de l’Ouest de la Paroisse Vermillon ne contient pas de tomates. Il
faut toujours prendre du poisson avec des arêtes. On y met
très peu d’eau, car le poisson crée de l’eau pendant la cuisson.
My mother learned to cook from her great-grandmother, Claire Thériot-Châtagnier. She loved fish and oysters. She would go in the woods to pick mushrooms which she used in her cooking. And she would make some meat patés in which she used thyme. I have attached a photo of her and her husband. I am also attaching a recipe for fish which came from Claire Thériot-Châtagnier. Just as a gombo with roux does not appeal to Louisianans, this fish sauce, called 'Court-Bouillon', from our region may also not appeal to folks from other regions of Louisiana. The Court-Bouillon from the west of Vermillion parish does not contain any tomatoes. And we must always have our fish with the bones. We use very little water because the fish will make its own water during cooking. |

PREPARATION | Couvrir
d’huile le fond d’une chaudière ou casserole épaisse
assez profonde pour y placer au moins 3 couches de poisson. Assaisonner
la farine de sel et de poivre et un peu de piment fort si on veut.
Rouler les tranches de poisson dans la farine assaisonnée.
Couvrir tous les côtés de chaque. Placer les tranches
de poisson dans le fond de la chaudière. Parsemer la couche de poisson
de queues d’oignon et de persil. Saupoudrer avec une
partie de la farine.
Répéter
avec une deuxième couche de poisson, herbes et farine. Puis encore
une fois avec une troisième couche. Y ajouter un tiers de tasse
d’eau.*
*Pour créer un plat un peu plus « haute cuisine », utiliser un tiers de tasse de vin blanc sec. Servir
avec du riz blanc en couvrant le riz de sauce claire qui sera produite
par le bouillon de poisson.
Cover the bottom of a heavy casserole or pot large enough to hold at least 3 layers of the fish slices. Season the flour with salt and pepper and a little hot pimentos if desired. Roll the fish slices in the seasoned flour. Cover both sides of the fish. Place the fish slices in the bottom of the pot. Spread each layer with onion tails and parsley. Sprinkle the layer with a little flour. Repeat
with the second layer of fish, herbes and flour. And again with the third
layer. Add a third of a cup of water.*
*To make more of a 'haute cuisine' dish, use a third of a cup of dry, white wine instead of water. Serve with white rice and spread some of the clear sauce made by the fish cooking over the white rice. |
