INGREDIENTS |

4 cup cider
vinegar
-
pinch of
salt
-
4 cup white
sugar
-
pinch of
clove sprigs
-
several
medium size beets

PREPARATION |
Wash
and cut off tops of beets, leaving 1-inch stem. Cook until tender; drain
all liquid and discard. In a saucepan, mix vinegar, sugar and salt. Boil
until all the sugar is dissolved. Peel, slice or cube in bite sizes and
place in clean sterile jars. Add a couple of clove springs in each jar.
Pour and cover beets with vinegar. Steam 5 minutes to seal cover. Store
in a cool place. |
